“Do a simple thing really well” is Chef Josh Chasteen’s motto and the Corner Room’s Restaurant Week entrée offering is indeed done really well. The relatively short list of ingredients — shrimp, fresh pineapple, poblano peppers, sauteed onions, and a chipotle pepper sauce served over authentic Spanish rice — is not complicated, but the dish packs a ton of flavor and just the right amount of heat.
