Opened last year to much excitement, Creekside at the Gamble Mill is a globally inspired restaurant with local sourcing at its core. For Happy Valley Restaurant Week, Chef Michael Marx is featuring a thick cut pork loin chop stuffed with chorizo, topped with pork belly and smoked gouda cheese, drizzled with mango BBQ, pumpkin seed spaghetti squash and local rainbow chard.
