Saint Louis Style Ribs: Half rack of pork ribs smoked slow and low
Chef’s Note: Meatier than baby backed ribs, this half rack has a sweet and smoky flavor. These might be the “cleanest” ribs in town. Try them with Bill Pickle’s house made sauces: Sweet Dixie Red, Carolina Gold, Scott’s Spicy Red and Green Chili Verde.
