While Chef Josh Chasteen has been diligently leveling up Bill Pickle’s barbecue game since he took over the kitchen in November — with 15-20 hour smoked brisket and pulled pork, an array of incredible from-scratch sauces, and a brisket burrito that’s become a fan favorite without ever actually appearing on the menu! — the star of this Restaurant Week is something that drew people to the Allen Street hotspot years before his arrival.
To the delight of a whole generation of Penn State alumni and locals alike, Pickle’s PB Hot Wings are back and bringing a whole lot of nostalgia to this year’s Restaurant Week. The original recipe was recently recovered and with some longtime Pickle’s staff still in the mix to vouch for the authenticity of the flavor, this walk down hot wing Memory Lane is not to be missed.
P.S. Never tried a PB Hot Wing? Even without the nostalgia factor, we still think these smoked wings, with a sauce that is somehow both mellow and spicy, are a Restaurant Week must-try.
